Knowledge: Advanced hot cooking techniques (roasting, stewing, grilling, frying). Food hygiene and safety standards (HACCP or similar). Inventory management and cost control.

We are currently seeking a dynamic, self-directed, and service-oriented individual for the position of Hot Kitchen Supervisor within our BSD operations program.

 

Position Objective

To coordinate, supervise, and ensure the efficient operation of the hot kitchen area, guaranteeing quality, safety, and efficiency in food preparation while adhering to service standards across various business units.

 

  • Operational Supervision: Lead the team of cooks and assistants in preparing hot meals.
  • Quality Control: Ensure that dishes meet standards of flavor, presentation, and appropriate temperature.
  • Inventory Management: Control inventories, request raw materials, and supervise their proper storage and rotation.
  • Regulatory Compliance: Ensure adherence to hygiene, food safety standards, and internal procedures.
  • Production Planning: Organize menus and preparation times according to the demand of each unit.
  • Training and Development: Train staff in hot kitchen techniques, best practices, and safety.
  • Incident Resolution: Address unforeseen operational issues and ensure continuity of service.
  • Communication: Collaborate with other departments (purchasing, storage, service) to ensure smooth operations.
