The Chef de Partie plays a crucial role in maintaining the highest culinary standards alongside the Sous Chef and the Executive Chef. This position involves overseeing the assigned section to ensure quality culinary production at all times. You will coordinate the kitchen staff within your section to ensure that all production adheres to portion control, operational plans, company guidelines, and service concepts.
To excel in this role, you must possess advanced culinary skills as well as strong leadership and communication abilities, as you will often lead your section during busy service periods.
Key Responsibilities:
- Accurately prepare and plate all orders as they are received, ensuring compliance with menu specifications and proper presentation.
- Prepare sauces, soups, and hot dishes; manage food placement and rotation while ensuring appropriate presentation.
- Set up the line for lunch and dinner, ensuring sufficient quantities based on expected covers, special events, and reservations.
- Order necessary supplies for your section and maintain mise en place.
- Supervise the proper preparation of each menu item and ensure operational readiness.
- Collaborate with chefs to guarantee seasoning, portion sizes, and aesthetic quality of dishes.
- Store food properly to maintain quality.
- Ensure timely service of dishes from your section.
- Maintain operational readiness and prioritize tasks in the event of last-minute reservation changes.
- Keep accurate records of preparation, cooking, and presentation specifications for all dishes produced in your section, maintained in an accessible file.
- Coordinate work activities with the assigned section staff.
- Lead the kitchen team in achieving the highest quality standards.
- Ensure compliance with safety, hygiene, and sanitation practices within your section.
- Adhere to all health, safety, and food hygiene regulations.
- Immediately report any potential or actual hazards.
- Have a thorough knowledge of the hotel's fire and emergency procedures.
